This easy Homemade Fig Jam is a delicious way to use fresh figs, perfect for spreading on toast, pairing with cheese, or adding to desserts.

  • 2 pounds fresh figs, stems removed and chopped (Choose ripe and soft figs.)
  • 3/4 cup sugar (Use up to 1 cup if figs are not sweet.)
  • 2 tablespoons lemon juice (Freshly squeezed is preferable.)
  • 1 teaspoon lemon zest (Optional but adds nice flavor.)
  • 1 pinch salt (Enhances sweetness.)
  • 2 to 4 tablespoons water (Only if needed to prevent sticking.)

Instructions

Preparation

  1. In a medium pot, add chopped figs, sugar, lemon juice, lemon zest (if using), and a pinch of salt. Stir and let it sit for about 10 minutes.
  2. Turn the heat to medium and bring to a gentle simmer. Stir often to prevent sticking.

Cooking

  1. Once it starts bubbling, lower the heat to medium-low. Let it cook for about 30 to 45 minutes, stirring every few minutes.
  2. If the mixture looks dry, splash in a tablespoon or two of water.
  3. When the fruit is soft, use a potato masher or the back of a spoon to mash it to your desired texture.
  4. For a smoother consistency, blend briefly with an immersion blender, but be cautious as it will be hot.

Final Steps

  1. To test for the right consistency, use the cold plate test: Spoon a little hot jam onto a cold plate, wait 30 seconds, then drag your finger through it. If it wrinkles and does not run back together quickly, it is ready.
  2. If it still looks too runny, cook for an additional 5 minutes and test again.

Notes

This is a refrigerator jam, not for canning. Store in clean jars in the fridge for about 2 to 3 weeks.
