Description

A quick and fresh salad featuring peppery arugula, sweet figs, creamy goat cheese, and a delicious maple Dijon vinaigrette.

Salad Ingredients

  • 4 cups Fresh arugula (Baby arugula is recommended.)
  • 8 oz Fresh figs (Black mission or brown turkey figs are both great.)
  • 4 oz Goat cheese (Can substitute with feta, blue cheese, shaved parmesan, or burrata.)
  • 1/2 cup Walnuts (Toast if possible for better flavor.)
  • 1 small Optional add-ins (Thin sliced red onion, cucumber ribbons, avocado, or pomegranate seeds.)

Maple Dijon Vinaigrette

  • 2 tablespoons Olive oil
  • 1 tablespoon Maple syrup (Adjust to taste.)
  • 1 tablespoon Dijon mustard (Add more for extra bite.)
  • 1 tablespoon Apple cider vinegar
  • 1 pinch Salt
  • 1 pinch Black pepper

Instructions

Assemble the Salad

  1. Start with a big handful of arugula in a large bowl or on a platter.
  2. Add sliced figs on top.
  3. Sprinkle on walnuts and crumble goat cheese.
  4. Drizzle with maple Dijon vinaigrette, then toss gently or leave layered if serving on a platter.
  5. Finish with a pinch of flaky salt and a crack of pepper if desired.

Make the Vinaigrette

  1. In a small jar with a lid, add olive oil, maple syrup, Dijon mustard, apple cider vinegar, and a pinch of salt and black pepper.
  2. Shake vigorously for about 15 seconds.
  3. Taste and adjust sweetness or tanginess as desired.

Notes

For the best texture, store components separately if not serving immediately. This salad is best served fresh but can be prepped a few hours ahead without dressing.
