Description
A quick and fresh salad featuring peppery arugula, sweet figs, creamy goat cheese, and a delicious maple Dijon vinaigrette.

Salad Ingredients
- 4 cups Fresh arugula (Baby arugula is recommended.)
- 8 oz Fresh figs (Black mission or brown turkey figs are both great.)
- 4 oz Goat cheese (Can substitute with feta, blue cheese, shaved parmesan, or burrata.)
- 1/2 cup Walnuts (Toast if possible for better flavor.)
- 1 small Optional add-ins (Thin sliced red onion, cucumber ribbons, avocado, or pomegranate seeds.)
Maple Dijon Vinaigrette
- 2 tablespoons Olive oil
- 1 tablespoon Maple syrup (Adjust to taste.)
- 1 tablespoon Dijon mustard (Add more for extra bite.)
- 1 tablespoon Apple cider vinegar
- 1 pinch Salt
- 1 pinch Black pepper
Instructions
Assemble the Salad
- Start with a big handful of arugula in a large bowl or on a platter.
- Add sliced figs on top.
- Sprinkle on walnuts and crumble goat cheese.
- Drizzle with maple Dijon vinaigrette, then toss gently or leave layered if serving on a platter.
- Finish with a pinch of flaky salt and a crack of pepper if desired.
Make the Vinaigrette
- In a small jar with a lid, add olive oil, maple syrup, Dijon mustard, apple cider vinegar, and a pinch of salt and black pepper.
- Shake vigorously for about 15 seconds.
- Taste and adjust sweetness or tanginess as desired.
Notes
For the best texture, store components separately if not serving immediately. This salad is best served fresh but can be prepped a few hours ahead without dressing.
