For the Chocolate Peanut Butter Coating
- 1 cup Chocolate chips (semi-sweet)
- 1/2 cup Creamy peanut butter (Can increase for more peanut butter flavor.)
- 1 tbsp Butter (For silkiness.)
- 1 tsp Vanilla extract
- 1 cup Powdered sugar (For tossing at the end.)
For the Snack Mix
- 4 cups Crisp rice cereal squares (Best for holding up under coating.)
- 1 cup M& M’s (For color and chocolate pops.)
- 1 cup Reese’s (mini cups or pieces) (Optional, but highly recommended.)
- 2 cups Pretzels (For salty crunch.)
Instructions
Preparation
- Measure your cereal into a big bowl.
- Melt the chocolate chips, peanut butter, and butter together until smooth. Stir in vanilla.
- Pour the warm coating over the cereal and gently fold until most pieces look coated.
- Let it sit for a couple of minutes so it is not piping hot.
- Transfer to a zip top bag with powdered sugar and shake until coated. Or do it in batches.
- Spread on a lined baking sheet to cool and dry.
- Once cool, mix in M&M’s, Reese’s, and pretzels.
Notes
For best results, let the cereal cool a bit before mixing in candy to prevent melting. Store in an airtight container at room temperature for up to 5 days. Can be frozen for 2 months.
