Description

A sweet, spicy, and sticky chicken bowl that’s customizable with easy pantry staples and fresh veggies.


Ingredients

For the Chicken

  • 1 lb Chicken thighs or breasts (Thighs are juicier; breasts are leaner.)
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Smoked paprika or chili powder (Optional, for additional flavor.)

For the Sauce

  • 1/2 cup Honey (Main sweetness.)
  • 1/4 cup Hot sauce (Use your favorite, mild is fine.)
  • 2 tbsp Apple cider vinegar or rice vinegar (Balances the sweetness.)
  • 2 cloves Garlic (Fresh or jarred.)
  • 2 tbsp Butter or olive oil (Adds richness to the glaze.)

For the Base

  • 2 cups Jasmine rice (Or other preferred base.)

Toppings

  • 1 cup Cucumber (Sliced.)
  • 1 avocado Avocado (Sliced.)
  • 1 cup Shredded cabbage
  • 1/4 cup Scallions (Chopped.)
  • 1/4 cup Cilantro (Chopped.)
  • 1 lime Lime (For serving.)


Instructions

Preparation

  1. Start cooking rice or warming your preferred base.
  2. Pat the chicken dry and season with salt, pepper, and smoked paprika (if using).

Cooking

  1. Heat oil in a skillet and cook the chicken until browned and cooked through, flipping once.
  2. Reduce the heat, add butter, and pour in the hot honey mixture. Toss the chicken to coat and let it glaze for 1 to 2 minutes.

Assembly

  1. In a bowl, layer rice first, then sliced chicken, followed by vegetables and toppings.
  2. Spoon extra sauce over everything to enhance flavor.
