Ingredients
For the Chicken
- 1 lb Chicken thighs or breasts (Thighs are juicier; breasts are leaner.)
- 1 tbsp Salt
- 1 tbsp Pepper
- 1 tbsp Smoked paprika or chili powder (Optional, for additional flavor.)
For the Sauce
- 1/2 cup Honey (Main sweetness.)
- 1/4 cup Hot sauce (Use your favorite, mild is fine.)
- 2 tbsp Apple cider vinegar or rice vinegar (Balances the sweetness.)
- 2 cloves Garlic (Fresh or jarred.)
- 2 tbsp Butter or olive oil (Adds richness to the glaze.)
For the Base
- 2 cups Jasmine rice (Or other preferred base.)
Toppings
- 1 cup Cucumber (Sliced.)
- 1 avocado Avocado (Sliced.)
- 1 cup Shredded cabbage
- 1/4 cup Scallions (Chopped.)
- 1/4 cup Cilantro (Chopped.)
- 1 lime Lime (For serving.)
Instructions
Preparation
- Start cooking rice or warming your preferred base.
- Pat the chicken dry and season with salt, pepper, and smoked paprika (if using).
Cooking
- Heat oil in a skillet and cook the chicken until browned and cooked through, flipping once.
- Reduce the heat, add butter, and pour in the hot honey mixture. Toss the chicken to coat and let it glaze for 1 to 2 minutes.
Assembly
- In a bowl, layer rice first, then sliced chicken, followed by vegetables and toppings.
- Spoon extra sauce over everything to enhance flavor.
Notes
