- 1 lb Sausage, sliced or crumbled (Andouille, smoked sausage, or hot sausage)
- 1 large Onion, diced
- 1 medium Bell pepper, diced
- 2-4 cloves Garlic, minced

- 1 head Green cabbage, chopped

Instructions
Preparation
- Start with bacon in a cold skillet, then turn the heat to medium. Let it slowly render until crisp, then remove and leave drippings.
- Add onion and bell pepper to the drippings, cooking until softened (about 3-5 minutes). Add garlic at the end.
Cooking
- Add sausage to the pan and brown it well. If using sliced sausage, brown it on both sides first.
- Stir the bacon back into the pan, scraping the bottom for flavor.
- Pour in the diced tomatoes and sprinkle with Creole seasoning and optional paprika.
- If you want a thicker sauce, mix cornstarch with water and stir it in. Simmer for 1-2 minutes.
- Add chopped cabbage in handfuls, mixing to coat it with the sauce.
- Cover and simmer on medium-low for 12-25 minutes until cabbage is tender yet slightly crisp.
Finishing Touches
- Taste and adjust seasoning with more Creole seasoning or hot sauce as desired.
- Serve warm, ideally with rice, cornbread, or a simple salad.
