- 4 pounds Fresh cucumbers (pickling cucumbers are ideal) (Smaller, firmer cucumbers preferred.)
- 1 large Onion
- 1-2 pieces Bell peppers (Green is classic, but use any color you have.)
- 3 tablespoons Pickling salt or kosher salt
- 2 cups White vinegar (5% acidity) (Essential for canning.)
- 1 cup Water
- 2 tablespoons Sugar (Optional, to round out flavors.)
- 2 tablespoons Dill seed or 1 bunch fresh dill, chopped
- 1 tablespoon Mustard seed
- 1 teaspoon Celery seed (Optional but recommended for flavor.)
- 2-3 cloves Garlic, minced (Optional, adjust according to taste.)
- 1 teaspoon Turmeric (Optional for color.)
- Crushed red pepper flakes, to taste (Optional for heat.)
Instructions
Preparation
- Finely chop cucumbers, onion, and peppers.
- Toss with salt in a large bowl. Let sit for 2 to 3 hours.
- Drain very well, pressing out liquid.
Cooking
- In a pot, bring vinegar, water, sugar (if using), and spices to a gentle boil.
- Add drained vegetables. Simmer for 10 to 15 minutes.
- Ladle into jars, and either refrigerate or water bath can for long-term storage.
Notes
Drain thoroughly to ensure a crisp relish. It tastes better after 24 to 48 hours once flavors settle. Can be used in various dishes like salads and sauces.
