- 2 large large cucumbers (or 4 to 5 Persian cucumbers)
- 6 to 8 mini sweet peppers (mixed colors are recommended)
- 2 to 3 green onions (sliced, optional but good)
Dressing
- 2 tablespoons rice vinegar (or apple cider vinegar)
- 1 tablespoon soy sauce (or tamari for gluten free)
- 1 to 2 teaspoons toasted sesame oil
- 1 teaspoon honey or maple syrup (optional for a sweet edge)
- 1 to 2 teaspoons sesame seeds
- Salt and pepper (to taste)
Optional Add-Ins
- 1 to 2 teaspoons chili crisp (for added heat)
- 1 small garlic clove (grated, for seasoning)
- 1 teaspoon grated ginger (for flavor)
Instructions
Preparation
- Slice your cucumbers and sweet peppers.
- Add them to a big bowl.
- Toss in green onions if using.
- Pour in rice vinegar, soy sauce, and sesame oil.
- Add sesame seeds and a tiny pinch of salt and pepper.
- Toss well for 30 seconds.
- Taste and adjust the flavors as needed, adding more vinegar, sesame oil, or soy sauce.
Notes
For maximum crunch, store sliced veggies separately from the dressing until ready to serve. This salad can also be customized with different dressings or toppings.
