  • 1 cup Corned beef, chopped (Use deli-sliced for best flavor.)
  • 2 cups Swiss cheese, shredded (Reserve a little for topping.)
  • 8 oz Cream cheese, softened (Makes mixing easier.)
  • 1 cup Sour cream or plain Greek yogurt (Provides a tangy flavor.)
  • 1 cup Sauerkraut, well drained (Drain and press to remove liquid.)
  • 1/2 cup Thousand Island or Russian dressing (Choose according to preference.)
  • 1 tsp Garlic powder
  • 1/4 tsp Black pepper

Instructions

Preparation

  1. Spray the slow cooker insert lightly with nonstick spray.
  2. Add softened cream cheese, sour cream, and dressing. Stir until mostly combined.
  3. Stir in the drained sauerkraut, chopped corned beef, and about two thirds of the Swiss cheese.

Cooking

  1. Cover and cook on low for 2 to 2.5 hours, stirring every 30 to 45 minutes.
  2. When hot and creamy, sprinkle the remaining Swiss cheese on top, cover for 10 minutes, then serve.

Notes

To keep the dip creamy, drain the sauerkraut thoroughly and avoid heating too long. Use full-fat dairy for best texture.
