- 1 lb boneless skinless chicken breasts or thighs (Both work well.)
- 4 cloves garlic, fresh minced (Jar garlic is also acceptable for busy nights.)
- 1 cup chicken broth (Keeps everything juicy.)
- 1 cup heavy cream (For a rich sauce.)
- 1 cup Parmesan cheese, freshly grated (Pre-shredded works too.)
- 1/2 cup sun dried tomatoes, packed in oil, chopped
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon cornstarch (optional) (For a thicker sauce at the end.)

Preparation
- Spray your slow cooker insert or use a liner for easy cleanup.
- Add chicken in an even layer.
- Sprinkle in salt, pepper, Italian seasoning, and minced garlic.
- Pour in chicken broth and heavy cream, then add chopped sun dried tomatoes.
- Cover and cook on LOW for 3.5 to 5 hours or HIGH for 2 to 3 hours. Avoid lifting the lid during cooking.
- When the chicken is done, stir in Parmesan cheese. If you want a thicker sauce, mix 1 tablespoon cornstarch with 1 tablespoon water and stir it in, then let it cook for an additional 10 to 15 minutes.
- Taste the sauce and adjust salt and pepper as needed.
Notes
If using chicken breasts, try to pick similar sized pieces to ensure even cooking. Leftovers can be refrigerated for 3 to 4 days. Add a splash of broth or cream for reheating if needed.
