Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1/2 cup Honey (For sweetness and a glossy sauce)
  • 1/4 cup Soy sauce (Low sodium is recommended)
  • 4 cloves Garlic, minced (Fresh is best, but jarred works)
  • 2 tablespoons Ketchup (For depth, can also use tomato paste)
  • 2 tablespoons Rice vinegar or apple cider vinegar (For brightness)
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Red pepper flakes (Optional for some heat)

For thickening the sauce

  • 1 tablespoon Cornstarch
  • 1 tablespoon Water (For cornstarch slurry)

Optional toppings

  • 1 tablespoon Toasted sesame oil (For drizzling at the end)
  • 2 tablespoons Green onions, chopped (For garnish)


Instructions

Preparation

  1. Lightly grease your crockpot or use a liner for easy cleanup.
  2. Lay the chicken breasts in a single layer in the bottom of the crockpot.
  3. In a bowl, whisk together honey, soy sauce, garlic, ketchup, and vinegar. Pour the mixture over the chicken.

Cooking

  1. Put the lid on and cook on LOW for 2.5 to 4 hours, depending on thickness, until the chicken reaches an internal temperature of 165°F.
  2. When the chicken is cooked through, slice or shred it, then spoon the sauce over everything and serve.

Sauce thickening (optional)

  1. If you want a thicker sauce, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir it into the sauce during the last 15 to 20 minutes, raising the heat to HIGH.

Notes

For optimal results, do not overcook the chicken. Store leftovers in an airtight container in the fridge for 3 to 4 days, or freeze for up to 3 months.
