A creamy and comforting slow cooker meal that’s fuss-free and perfect for busy weeknights.


Ingredients

Main Ingredients

  • 2 large boneless, skinless chicken breasts or thighs (Easiest to use.)
  • 2 cups chicken broth (Vegetable broth can be used if necessary.)
  • 1 can diced tomatoes (Fire roasted for extra flavor.)
  • 1 cup heavy cream (Half-and-half can be used as an alternative.)
  • 16 ounces cheese tortellini (Fresh or frozen recommended.)
  • 2-3 cups fresh spinach or kale
  • 2 teaspoons Italian seasoning (Use your favorite blend.)
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: shredded parmesan or mozzarella for topping


Instructions

Preparation

  1. Lay chicken in the bottom of your slow cooker and sprinkle with salt, pepper, Italian seasoning, and minced garlic.
  2. Pour in chicken broth and diced tomatoes, including the liquid. Swirl gently to combine.
  3. Cover and cook on low for 5-6 hours.
  4. About 30 minutes before serving, remove chicken, shred or chop it, and return it to the slow cooker along with heavy cream, tortellini, and spinach.
  5. Cover and cook for an additional 30 minutes, until the tortellini are tender.
  6. Taste and adjust seasonings as needed. Top with cheese before serving.

Notes

Store leftovers in a sealed container for 3-4 days. For freezing, save just the chicken and sauce before adding tortellini to avoid mushy pasta. Reheat in the microwave or stovetop with a splash of broth to maintain texture.
