  • 4 pieces Chicken thighs (bone-in or boneless) (Bone-in thighs are more flavorful; boneless are more convenient.)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika (optional)
  • 2 cups Chicken broth (low sodium)
  • 1 can Cream of chicken soup (Can substitute with cream of mushroom.)
  • 1/2 cup Sour cream or heavy cream (For creaminess.)
  • 2 tablespoons Cornstarch (or flour) (For thickening.)

Optional Additions

  • 1 cup Sliced onions (Add for extra flavor.)
  • 1 cup Sliced mushrooms (Add for a mushroom gravy twist.)
  • 1 teaspoon Fresh thyme or parsley (Use for garnishing.)


Instructions

Preparation

  1. Season the chicken thighs with salt, pepper, garlic powder, onion powder, and paprika.
  2. In the crockpot, whisk together chicken broth and cream of chicken soup until mostly smooth.
  3. Nestle the chicken thighs into the sauce and add sliced onions or mushrooms if using.
  4. Cover and cook on Low for 5 to 6 hours or High for 3 to 4 hours.
  5. Stir in sour cream or heavy cream near the end to maintain creaminess.
  6. Mix cornstarch with cold water and stir it into the gravy to thicken for a few minutes.

Notes

For best results, avoid overfilling the crockpot and season in layers. Let the dish rest a few minutes before serving to allow the gravy to thicken.
