Ingredients

Chicken and Seasoning

  • 4 pieces Chicken breasts (or boneless thighs) (Thighs work well too.)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Italian seasoning
  • 2 cloves Garlic (fresh minced or jarred)

Cooking Liquid and Flavor Enhancers

  • 1 cup Chicken broth
  • 1 cup Heavy cream (For a creamy finish.)
  • 1/2 cup Sun dried tomatoes (packed in oil) (Adds extra flavor.)

Garnish and Thickening (optional)

  • 1/4 cup Grated parmesan cheese (Freshly grated melts smoother.)
  • 1 tablespoon Cornstarch (Optional for thickening.)
  • 1 tablespoon Fresh basil (Optional, adds a fresh flavor.)


Instructions

Preparation

  1. Step 1: Season the chicken by sprinkling both sides with salt, pepper, and Italian seasoning.
  2. Step 2: Optional but worth it, quickly sear the chicken in a hot pan with a little oil for added flavor.
  3. Step 3: Add the chicken to the slow cooker with garlic, chicken broth, and sun dried tomatoes.

Cooking

  1. Step 4: Cook on low for 3 to 4 hours or high for 2 to 3 hours, until the chicken is cooked through.
  2. Step 5: Stir in heavy cream and parmesan near the end of cooking and let it warm through for 15 to 20 minutes.
  3. Step 6: For a thicker sauce, mix cornstarch with cold water and stir it in, letting it cook for another 10 minutes.

Garnishing

  1. Step 7: Top with fresh basil and additional parmesan if desired.

Notes

Leftovers are amazing and the sauce thickens overnight. Adjust seasonings to taste before serving.
