Garnish and Thickening (optional)
- 1/4 cup Grated parmesan cheese (Freshly grated melts smoother.)
- 1 tablespoon Cornstarch (Optional for thickening.)
- 1 tablespoon Fresh basil (Optional, adds a fresh flavor.)
Instructions
Preparation
- Step 1: Season the chicken by sprinkling both sides with salt, pepper, and Italian seasoning.
- Step 2: Optional but worth it, quickly sear the chicken in a hot pan with a little oil for added flavor.
- Step 3: Add the chicken to the slow cooker with garlic, chicken broth, and sun dried tomatoes.
Cooking
- Step 4: Cook on low for 3 to 4 hours or high for 2 to 3 hours, until the chicken is cooked through.
- Step 5: Stir in heavy cream and parmesan near the end of cooking and let it warm through for 15 to 20 minutes.
- Step 6: For a thicker sauce, mix cornstarch with cold water and stir it in, letting it cook for another 10 minutes.
Garnishing
- Step 7: Top with fresh basil and additional parmesan if desired.
Notes
Leftovers are amazing and the sauce thickens overnight. Adjust seasonings to taste before serving.
