  • 2 lbs boneless, skinless chicken breasts or thighs (Chicken thighs are recommended for extra juiciness.)
  • 8 oz cream cheese (Cut into chunks for quicker melting.)
  • 1 cup salsa (Use your favorite jar, mild or hot.)
  • 1 packet taco seasoning (Store-bought is fine.)
  • 1 cup corn (Canned or frozen.)
  • 1 cup black beans (Rinsed and drained.)
  • 1 can green chiles (Optional but recommended for flavor.)
  • 2 tbsp lime juice (For added freshness at the end.)
  • 1 cup shredded cheese (Optional for serving.)
  • to taste salt and pepper (For seasoning.)


Instructions

Preparation

  1. Add the chicken to the slow cooker and season lightly with salt and pepper.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour in salsa, then add black beans, corn, and green chiles if using.
  4. Add cream cheese on top.
  5. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until the chicken is tender.
  6. Shred the chicken in the slow cooker and stir everything together until creamy.
  7. Squeeze in lime juice and adjust seasoning as needed.
