Preparation
- Melt the butter in a large skillet over medium heat.
- Add the corn and stir until it is hot and glossy, about 3-5 minutes.
Cooking
- Pour in the cream (or half and half) and add cream cheese if using, stirring until melted.
- Sprinkle in the flour (or cornstarch mixed with a splash of cold liquid) and let it simmer until it coats the spoon, about 4-6 minutes.
- Season with salt, pepper, and a tiny pinch of sugar if needed. Taste and adjust.
Notes
For variations, use fresh corn from the cob, or frozen corn. You may also add cheese, cooked bacon, or spices for extra flavor. This recipe is very forgiving, you can blend a portion for a creamier texture.
