Main Ingredients

  • 2 cups shredded or chopped chicken (Use leftover, rotisserie, or cooked chicken)
  • 6 slices cooked and crumbled bacon (Thick cut bacon is recommended for bigger crispy bits)
  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 packet ranch seasoning (Can be homemade or store-bought)
  • 8 oz cream cheese (Use softened for better incorporation)
  • 1.5 cups sharp cheddar cheese, shredded (Reserve some for topping)
  • 2 cups egg noodles (Other noodles like rotini or medium shells can be used)
  • to taste salt
  • to taste black pepper

Optional Ingredients

  • 1 handful spinach (Can be added for extra nutrition)
  • pinch red pepper flakes (For some heat if desired)
  • 2 green onions sliced, for topping

Instructions

Preparation

  1. Cook the bacon in a large soup pot until crisp, then remove and set aside, leaving a bit of bacon fat in the pot.
  2. Add onion, carrots, and celery to the pot and sauté until they soften.
  3. Stir in the garlic and cook for an additional 30 seconds.
  4. Pour in the chicken broth and stir in the ranch seasoning, bringing it to a gentle simmer.

Cooking

  1. Add the cooked chicken and noodles to the pot, cooking until the noodles are just tender.
  2. Lower the heat and stir in the cream cheese until it is fully melted and incorporated into the soup.
  3. Finally, add the shredded cheddar cheese and stir until melted.

Serving

  1. Top each bowl with crumbled bacon and extra cheddar cheese before serving.

Notes

To keep noodles from becoming mushy, you can cook them separately and add them to individual bowls. Store leftover noodles in a separate container.
