- 1 lb Ground beef (Use 80/20 for flavor and drain the grease.)
- 4 medium Potatoes, sliced thin (Aim for 1/8 inch thickness; Yukon Golds work best.)
- 1 can Beans (pinto, kidney, or black beans) (Rinse and drain before use.)
- 1 can Diced tomatoes (Use plain or with chilies, and drain if you want it thicker.)
- 1 medium Onion, diced (Can use onion powder if preferred.)
- 2 cloves Garlic, minced (Or use garlic powder.)
- 1 cup Shredded cheese (Cheddar or Monterey Jack recommended.)
- 1 cup Broth or water (Just enough to aid cooking, do not add soup-like.)
Seasonings
- 1 tbsp Chili powder
- 1 tsp Smoked paprika
- 1 tsp Cumin
- 1 tsp Salt (To taste.)
- 1 tsp Pepper (To taste.)
Instructions
Preparation
- Brown the ground beef and diced onion in a skillet on medium heat until the meat is cooked through. Drain excess grease and set aside.
- Slice the potatoes into thin rounds (about 1/8 inch thick).
- Rinse and drain beans and diced tomatoes.
Layering
- Lightly grease the slow cooker insert.
- Add a thin layer of potatoes to the bottom.
- Layer half of the browned beef and onion mixture over the potatoes.
- Spread half of the beans and tomatoes over the beef.
- Add a sprinkle of seasonings and a splash of broth.
- Repeat the layers until all ingredients are used up, finishing with a layer of potatoes or tomatoes.
Cooking
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until potatoes are tender.
- Once cooked, sprinkle cheese on top and cover for an additional 10-20 minutes to allow it to melt.
Serving
- Scoop and serve. Optionally, top with sour cream, green onions, or extra cheese.
Notes
For best texture, thinly slice potatoes and do not over-pack the slow cooker. Adjust spices to taste before placing in the slow cooker. You can substitute ground turkey for beef and add extra vegetables if desired.
