  • 2 medium Zucchini, shredded (Make sure to squeeze out excess moisture.)
  • 1 cup Cottage cheese (2% or 4% for best texture.)
  • 3 large Eggs
  • 1 cup Shredded cheese (Cheddar, mozzarella, or a blend.)
  • 1 small Onion or green onion (Optional but adds flavor.)
  • 1 teaspoon Garlic powder (Or use minced garlic.)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Optional Add-Ins

  • 1 cup Spinach (Fresh or cooked.)
  • 1 cup Diced bell pepper (Optional, for added flavor.)
  • 1 cup Chopped ham (Optional add-in for protein.)
  • 1 cup Cooked bacon (Optional for extra flavor.)


Instructions

Preparation

  1. Preheat the oven to 375°F (190°C). Grease a pie dish or an 8×8 baking dish.
  2. Shred the zucchini using a box grater. Toss with a small pinch of salt and let sit for 10 minutes. Wrap in a clean kitchen towel and squeeze to remove excess liquid.
  3. In a bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and pepper.
  4. Stir in the shredded cheese and squeezed zucchini. Add any optional ingredients you are using.

Baking

  1. Pour the mixture into the prepared dish and smooth the top.
  2. Bake for 35 to 45 minutes until the center is set and the top is lightly golden.
  3. Let the quiche rest for 10 minutes before slicing to help it firm up.

Notes

For best results, do not skip squeezing the zucchini to avoid a watery quiche. Feel free to experiment with different cheeses and seasonings to fit your taste.
