- 1 cup Diced bell pepper (Optional, for added flavor.)
- 1 cup Chopped ham (Optional add-in for protein.)

Instructions
Preparation
- Preheat the oven to 375°F (190°C). Grease a pie dish or an 8×8 baking dish.
- Shred the zucchini using a box grater. Toss with a small pinch of salt and let sit for 10 minutes. Wrap in a clean kitchen towel and squeeze to remove excess liquid.
- In a bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and pepper.
- Stir in the shredded cheese and squeezed zucchini. Add any optional ingredients you are using.
Baking
- Pour the mixture into the prepared dish and smooth the top.
- Bake for 35 to 45 minutes until the center is set and the top is lightly golden.
- Let the quiche rest for 10 minutes before slicing to help it firm up.
Notes
For best results, do not skip squeezing the zucchini to avoid a watery quiche. Feel free to experiment with different cheeses and seasonings to fit your taste.
