For the Brownies
- 1 cup Unsalted butter (Melted)
- 1 cup Granulated sugar
- 1/2 cup Brown sugar (For extra chew)
- 2 large Eggs
- 1 teaspoon Vanilla extract
- 1 cup All-purpose flour (Measured carefully)
- 1/3 cup Unsweetened cocoa powder (Good quality suggested)
- 1/2 teaspoon Salt
- 4 ounces Melted chocolate (Semi-sweet variety recommended)
For the Ganache Topping
- 1/2 cup Heavy cream (Heated until hot)
- 4 ounces Chopped chocolate (For the ganache)
- 1/2 cup Rainbow chips (For topping)
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper.
- Melt the butter in a bowl, then stir in the granulated sugar and brown sugar.
- Whisk in the eggs and vanilla until the batter is glossy.
- Stir in the melted chocolate.
- Add the flour, cocoa powder, and salt. Stir just until no dry streaks remain.
- Spread the batter into the lined pan and bake until the center is set but still soft (about 25 minutes).
- Cool completely before adding the ganache topping.
Making Ganache
- Heat heavy cream until hot but not boiling.
- Pour the hot cream over the chopped chocolate in a bowl and let it sit for 2 minutes.
- Stir gently until smooth. If desired, stir in a small spoon of butter for extra gloss.
- Pour the ganache over the cooled brownies and spread it to the edges. Immediately sprinkle rainbow chips on top before ganache sets.
Notes
Store in an airtight container at room temperature for 3 days or in the refrigerator for up to 6 days. These brownies can be frozen for up to 2 months.
