Description

A warm and comforting side dish that complements any main meal, Buttered Corn Rice is easy to make and perfect for busy nights.


Ingredients

Main Ingredients

  • 1 cup Long grain white rice
  • 1 cup Corn (frozen, canned, or fresh) (If using fresh corn, cut off the cob.)
  • 2 tbsp Butter (Can be salted or unsalted.)
  • 2 cups Chicken broth or water (Broth adds more flavor.)
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Optional Add-ins

  • 1 splash Milk or cream (For extra richness.)
  • 2 tbsp Chopped parsley or green onion (For a fresh finish.)


Instructions

Preparation

  1. Rinse the rice in a fine strainer until the water runs mostly clear for fluffier rice.
  2. In a pot, add the rinsed rice and chicken broth or water, bring to a gentle boil, then lower the heat and cover.

Cooking

  1. Let the rice cook until the liquid is absorbed, about 15-20 minutes.
  2. For frozen corn, stir it into the rice for the last 5 minutes of cooking. For canned corn, drain and stir it in near the end to warm.

Finishing Touches

  1. Turn off the heat, and add butter, salt, pepper, and any optional creamy add-ins.
  2. Cover again and let it sit for 2 minutes to melt and steam everything together.

Serving

  1. Fluff the rice with a fork, taste for seasoning, and then serve.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat with a splash of water or broth. This recipe is easy to modify with cheese, garlic, or spices to suit your taste.
