Description

These Crispy Corn Fritters are quick, satisfying, and full of sweet corn. Perfect as a snack or appetizer, they cook fast and require no special equipment.

Ingredients

Main Ingredients

  • 2 cups Sweet corn (fresh, frozen, or canned)
  • 1 cup All purpose flour
  • 1 tbsp Baking powder (For a little lift)
  • 2 large Eggs
  • 1/2 cup Milk (or buttermilk)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1/4 cup Green onions or grated onion (Optional)
  • 1/2 tsp Garlic powder or paprika (Optional)
  • Oil For frying (A neutral oil works best)
  • 1/4 cup Shredded cheddar (Optional, for extra comfort)

Instructions

Preparation

  1. In a medium bowl, whisk together flour, baking powder, salt, pepper, and any extra spices you like.
  2. In a small bowl, whisk eggs and milk.
  3. Pour the wet ingredients into the dry and stir just until combined. The batter should be thick.
  4. Fold in the sweet corn and any add-ins like green onions or cheese.

Cooking

  1. Heat a skillet over medium heat with a generous layer of oil. When hot, drop in batter (about 2 tablespoons per fritter) and gently flatten.
  2. Cook 2 to 3 minutes per side until golden brown, then transfer to a plate lined with paper towels.

Notes

Serve with sour cream, Greek yogurt, hot honey, salsa, or mayo sriracha sauce. Store leftovers in an airtight container in the fridge for up to 3 days. They can be reheated in a skillet, oven, or air fryer for best results.
