Description

A quick and customizable taco salad featuring seasoned ground beef, fresh vegetables, and crunchy Doritos topped with zesty Catalina dressing.


Ingredients

Main Ingredients

  • 1 lb Ground beef (Lean is great, but use what you have)
  • 1 packet Taco seasoning (Store-bought or homemade)
  • 1 head Romaine or iceberg lettuce (Crisp is key)
  • 1 cup Cherry tomatoes or diced tomatoes
  • 1 cup Shredded cheddar cheese or Mexican blend
  • 1 can Black beans or pinto beans (Optional, but filling)
  • 1 cup Corn (Optional, adds sweetness)
  • 0.5 medium Red onion, sliced thin (Optional)
  • 1 cup Catalina dressing (Do not skip, it’s essential)
  • 2 cups Doritos or tortilla chips (For crunch; use more if desired)

Optional Toppings

  • 1 cup Sour cream
  • 1 cup Salsa
  • 1 medium JalapeƱos
  • 1 medium Avocado


Instructions

Preparation

  1. Brown the ground beef in a skillet over medium heat, breaking it up as it cooks.
  2. Once no longer pink, drain off excess grease and add taco seasoning with the recommended amount of water on the packet. Stir and let it simmer for a couple of minutes until saucy.
  3. Chop the lettuce and add it to a large bowl. Incorporate tomatoes, cheese, beans, corn, and any other toppings you love.
  4. Spoon warm ground beef over the salad and drizzle with Catalina dressing.
  5. Before serving, crush Doritos over the top for added crunch.

Notes

For meal prep, store components separately for best texture. Add dressing and chips just before serving. Experiment with different proteins and dressings for variations.
