Description

A refreshing and creamy cucumber salad that’s perfect for summer gatherings and pairs beautifully with grilled dishes.

Ingredients

Main ingredients

  • 2 large large cucumbers (Or 3 small cucumbers.)
  • 1/2 small small onion, very thinly sliced (Optional but classic.)
  • 1/2 cup sour cream (Use full fat for best results.)
  • 2 tablespoons mayo (Optional, makes it extra creamy.)
  • 1 tablespoon vinegar (White or apple cider vinegar.)
  • 1 to 2 teaspoons sugar (To taste.)
  • 1/2 teaspoon salt (Plus more as needed.)
  • to taste black pepper
  • 1 to 2 tablespoons chopped fresh dill (Or 1 teaspoon dried.)

Instructions

Preparation

  1. Slice your cucumbers and onions. Put them in a bowl.
  2. In a separate bowl, stir together sour cream, mayo (if using), vinegar, sugar, salt, pepper, and dill.
  3. Pour dressing over the cucumbers. Toss gently until everything is coated.
  4. Let it chill for at least 15 to 30 minutes if you have time to help the flavors settle in.

Notes

Salt and drain cucumbers to prevent sogginess. Serve chilled for best texture. Keep dressing separate if making ahead.
