- 1/2 cup Mayonnaise (Adjust more to taste.)
- 1/2 cup Celery, finely chopped
- 2-3 tablespoons Red onion or green onion, finely chopped
- 1-2 teaspoons Dijon mustard
- 1-2 teaspoons Lemon juice

- 1/4 cup Chopped nuts (almonds, pecans, walnuts, etc.) (For crunch.)
- 1/4 cup Diced fruits (grapes, cranberries, apples) (For sweetness.)
- 2 tablespoons Chopped fresh herbs (dill, parsley, chives, etc.) (For added flavor.)
- 2 tablespoons Chopped pickles or capers (For extra savory flavor.)

Preparation
- In a medium bowl, combine the chopped chicken, celery, and onion.
- In a small bowl, stir together the mayonnaise, Dijon mustard, lemon juice, and a pinch of salt and pepper.
- Pour the dressing over the chicken mixture and stir until everything is coated.
- Taste and adjust seasoning as needed before serving.
Notes
Chill chicken salad for 20-30 minutes in the fridge to help flavors blend. Avoid overcooking chicken to prevent dryness. For meals, consider serving with crackers, in sandwiches, or with fresh vegetables.
