A refreshing and crunchy broccoli salad with a creamy homemade dressing, perfect for potlucks and sunny days.
Ingredients
For the salad
- 4 cups Fresh broccoli florets, chopped (Choose deep green, tight heads.)
- 1/2 cup Red onion, finely diced (A little goes a long way.)
- 4 slices Cooked bacon, crumbled (Can be replaced with smoked almonds for a non-pork option.)
- 1 cup Shredded cheddar cheese (Optional: use dairy-free cheese for a dairy-free version.)
- 1/2 cup Sunflower seeds (Or substitute with chopped nuts.)
- 1/2 cup Optional dried fruit (raisins or cranberries) (For a sweet bite.)
For the homemade dressing
- 1 cup Mayonnaise (Choose a good quality mayo.)
- 2 tablespoons Apple cider vinegar (For tang.)
- 1 tablespoon Sugar or honey (Adjust according to taste.)
- 1/2 teaspoon Salt (Add more to taste.)
- 1/4 teaspoon Black pepper

Preparation
- Chop the broccoli into small florets, peeling and slicing the stems if they are tender.
- Dice the red onion very small.
- Cook the bacon until crisp, then cool and crumble it.
- In a large bowl, combine broccoli, onion, bacon, cheese, sunflower seeds, and dried fruit if using.
- In a separate small bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
- Pour the dressing over the salad and stir until everything is well-coated.
- Cover and chill for at least 30 minutes to allow flavors to meld.
Notes
Best served chilled. Stir in sunflower seeds just before serving for maximum crunch.
