Description

A refreshing and crunchy broccoli salad with a creamy homemade dressing, perfect for potlucks and sunny days.


Ingredients

For the salad

  • 4 cups Fresh broccoli florets, chopped (Choose deep green, tight heads.)
  • 1/2 cup Red onion, finely diced (A little goes a long way.)
  • 4 slices Cooked bacon, crumbled (Can be replaced with smoked almonds for a non-pork option.)
  • 1 cup Shredded cheddar cheese (Optional: use dairy-free cheese for a dairy-free version.)
  • 1/2 cup Sunflower seeds (Or substitute with chopped nuts.)
  • 1/2 cup Optional dried fruit (raisins or cranberries) (For a sweet bite.)

For the homemade dressing

  • 1 cup Mayonnaise (Choose a good quality mayo.)
  • 2 tablespoons Apple cider vinegar (For tang.)
  • 1 tablespoon Sugar or honey (Adjust according to taste.)
  • 1/2 teaspoon Salt (Add more to taste.)
  • 1/4 teaspoon Black pepper


Instructions

Preparation

  1. Chop the broccoli into small florets, peeling and slicing the stems if they are tender.
  2. Dice the red onion very small.
  3. Cook the bacon until crisp, then cool and crumble it.
  4. In a large bowl, combine broccoli, onion, bacon, cheese, sunflower seeds, and dried fruit if using.
  5. In a separate small bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
  6. Pour the dressing over the salad and stir until everything is well-coated.
  7. Cover and chill for at least 30 minutes to allow flavors to meld.

Notes

Best served chilled. Stir in sunflower seeds just before serving for maximum crunch.
