For the salad
- 12-14 cups Mixed greens (baby arugula, romaine, etc.) (Choose your favorite greens.)
- 2-3 medium Oranges (navel or mandarins) (Segment over a bowl to catch juice.)
- 2 cups Pomegranate arils (Buy pre-seeded or seed them yourself.)
- 2/3 cup Feta cheese (Use block feta for creamier texture.)
- 2/3 cup Pecans (Toast for best flavor.)
For the dressing
- 3 tablespoons Olive oil
- 2 tablespoons Apple cider vinegar
- 1 tablespoon Dijon mustard
- 1-2 teaspoons Honey (To taste.)
- 1 pinch Salt
- 1 pinch Black pepper
- 1 tablespoon Fresh orange juice (Optional.)
Instructions
Preparation
- Wash and dry the greens thoroughly. If using a salad spinner, get them extra dry.
- Toast the pecans in a dry pan for about 5 minutes until fragrant.
- Segment or slice the oranges and set aside.
- Prepare the pomegranate arils if not pre-seeded.
- Mix all dressing ingredients in a small jar and shake well. Adjust seasoning to taste.
Assembly
- In a large bowl or platter, layer the greens first.
- Scatter oranges and pomegranate arils on top.
- Sprinkle feta and toasted pecans over the salad.
- Dress the salad just before serving or serve dressing on the side.
Notes
Keep the dressing and wet ingredients separate until serving to avoid soggy greens. Make ahead by preparing components separately.
