For the Filling

  • 2 cups pecan halves (Plus a handful extra for a packed top.)
  • 3 large eggs (Room temperature if possible.)
  • 1 cup corn syrup (Light or dark depending on preference.)
  • 3/4 cup brown sugar (Packed.)
  • 4 tablespoons melted butter (Cooling before mixing.)
  • 1/2 teaspoon salt
  • 2-3 tablespoons bourbon (Adjust for flavor preference.)
  • 2/3 cup chocolate chips or chopped chocolate (Semi-sweet is recommended.)

Instructions

Preparation

  1. Preheat your oven to 350°F (175°C).
  2. Place the unbaked pie crust in a 9-inch pie dish and crimp the edges if desired.
  3. Sprinkle the chopped chocolate or chocolate chips over the bottom of the crust.
  4. In a bowl, whisk the eggs until smooth.
  5. Whisk in corn syrup, brown sugar, melted butter, salt, vanilla extract, and bourbon.
  6. Fold in about 1 1/2 cups of pecans.
  7. Pour the filling into the crust, then arrange the remaining pecans on top.

Baking

  1. Bake for 50 to 60 minutes, checking at the 40-minute mark for crust color.
  2. The pie should have puffed edges and a slightly jiggly center.
  3. Cool completely for at least 3 to 4 hours before slicing.

Notes

Let the pie cool completely to ensure proper setting. Serve with vanilla ice cream, whipped cream, or Greek yogurt for a balanced flavor.
