For the Pie Crust
- 1 whole unbaked pie crust, homemade or store bought (Chill while preparing filling.)
For the Filling
- 2 cups pecan halves (Plus a handful extra for a packed top.)
- 3 large eggs (Room temperature if possible.)
- 1 cup corn syrup (Light or dark depending on preference.)
- 3/4 cup brown sugar (Packed.)
- 4 tablespoons melted butter (Cooling before mixing.)
- 1/2 teaspoon salt
- 2-3 tablespoons bourbon (Adjust for flavor preference.)
- 2/3 cup chocolate chips or chopped chocolate (Semi-sweet is recommended.)

Preparation
- Preheat your oven to 350°F (175°C).
- Place the unbaked pie crust in a 9-inch pie dish and crimp the edges if desired.
- Sprinkle the chopped chocolate or chocolate chips over the bottom of the crust.
- In a bowl, whisk the eggs until smooth.
- Whisk in corn syrup, brown sugar, melted butter, salt, vanilla extract, and bourbon.
- Fold in about 1 1/2 cups of pecans.
- Pour the filling into the crust, then arrange the remaining pecans on top.
Baking
- Bake for 50 to 60 minutes, checking at the 40-minute mark for crust color.
- The pie should have puffed edges and a slightly jiggly center.
- Cool completely for at least 3 to 4 hours before slicing.
Notes
Let the pie cool completely to ensure proper setting. Serve with vanilla ice cream, whipped cream, or Greek yogurt for a balanced flavor.
