Description

A quick and flavorful stir fry that transforms fresh green beans into a delicious dish with garlic and oyster sauce, perfect for weeknight dinners.


Ingredients

  • 1 pound Fresh green beans, trimmed (Fresh is best for crispy texture.)
  • 4-6 cloves Garlic, minced (Adjust based on garlic preference.)
  • 1-2 tablespoons Neutral oil (avocado, canola, or peanut) (For cooking the beans.)
  • 1 tablespoon Soy sauce (Adjust to taste, can use low sodium.)
  • 2 tablespoons Oyster sauce (Adds a savory depth.)
  • 1 teaspoon Sugar (Optional; balances saltiness.)
  • to taste Black pepper or white pepper (For seasoning.)
  • few drops Sesame oil (For flavor at the end.)
  • optional Chili flakes or chili crisp (For heat, if desired.)


Instructions

Preparation

  1. In a small bowl, stir together 1 tablespoon soy sauce, 2 tablespoons oyster sauce, 1 teaspoon sugar (optional), and a splash of water (1 to 2 tablespoons) to loosen the sauce.
  2. Put your wok or skillet on medium-high heat and let it get properly hot before adding oil.

Cooking

  1. Add 1 to 2 tablespoons of oil, then add the green beans. Spread them out and let them sit for a minute before stirring. Cook for 5 to 7 minutes total, tossing occasionally, until you see browned blister spots.
  2. Push the beans to the side and add a touch more oil if the pan is dry. Add the minced garlic and stir for about 15 to 30 seconds, just until fragrant.
  3. Pour in the sauce, toss for 30 to 60 seconds until glossy. Turn off the heat, add a few drops of sesame oil and season with pepper. Taste and adjust as necessary.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Best reheated in a skillet to maintain texture.
