Ingredients

For the Beef and Marinade

  • 1 pound flank steak, skirt steak, or sirloin, thinly sliced against the grain (Choose your preferred cut of beef.)
  • 2 tablespoons low sodium soy sauce (For marinating the beef.)
  • 1 tablespoon cornstarch (For velveting the beef.)
  • 1 teaspoon neutral oil (To mix with the beef.)

For the Sauce

  • 3 tablespoons soy sauce (For flavor.)
  • 1 tablespoon oyster sauce (This is key for that takeout flavor.)
  • 1 tablespoon brown sugar or honey (To balance the sauce.)
  • 2 cloves minced garlic (For added flavor.)
  • 1 teaspoon fresh ginger, minced (Use fresh for best results.)
  • 1 tablespoon water (To adjust sauce consistency.)
  • 1 teaspoon cornstarch (For thickening the sauce.)

For the Vegetables

  • 4 cups fresh broccoli florets (Medium size is preferred for even cooking.)

For Cooking

  • 2 tablespoons neutral oil (For frying the beef.)
  • 1 teaspoon sesame oil (Drizzle at the end for aroma.)

Instructions

Preparation

  1. Slice the beef thinly against the grain after firming it in the freezer for about 10 minutes.
  2. In a bowl, combine beef with soy sauce and cornstarch, letting it marinate for at least 2 minutes or up to 10 minutes.
  3. In a separate bowl, mix soy sauce, oyster sauce, brown sugar, minced garlic, ginger, and a splash of water.

Cooking

  1. Steam the broccoli in a skillet with a splash of water for about 2-3 minutes until bright. Transfer to a plate.
  2. Heat oil in the same skillet until hot; add beef in a single layer and sear for 2-3 minutes until mostly cooked.
  3. Add the broccoli back into the skillet with the sauce and toss for 30-60 seconds until everything is well coated and glossy.
  4. Finish with a drizzle of sesame oil.

Notes
