  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 medium zucchini, sliced into half moons or small chunks (Choose medium zucchini for best results)
  • 2 tablespoons olive oil or avocado oil
  • 2 cloves garlic, minced or grated
  • 1 medium onion, diced (optional) (adds flavor)
  • 1 cup mozzarella cheese, for meltiness
  • 1/4 cup parmesan cheese, for flavor
  • to taste salt and pepper
  • 1 tablespoon Italian seasoning or a mix of oregano and basil
  • optional cherry tomatoes, spinach, mushrooms, red pepper flakes (for variations)


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C).
  2. Lightly oil your baking dish.
  3. In a bowl, toss the chicken pieces with olive oil, salt, pepper, garlic, and Italian seasoning. Let it sit for 10 minutes if possible.
  4. Slice the zucchini and pat it lightly with a paper towel if it looks wet.

Assembly

  1. Add the seasoned chicken to the baking dish in an even layer.
  2. Add the zucchini and onion (if using) into the dish and toss everything so it’s coated.
  3. Sprinkle mozzarella cheese over the top, then add parmesan.

Baking

  1. Bake for about 20 to 30 minutes, until the chicken is cooked through and the cheese is golden.
  2. Let it rest for 5 minutes before serving.

Notes

To make it more casserole-style, consider adding more cheese. If using zucchini that releases a lot of water, you can spoon off excess liquid before adding more cheese.
