  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice (Adjust to taste.)
  • 1 tablespoon olive oil
  • 1 clove garlic (Small, minced.)

For Serving

  • 1 package pita bread (Warm and cut into triangles.)
  • 1 cup tzatziki (Classic dip.)
  • 1 cup hummus (Always a welcome addition.)
  • 1 cup mixed veggies (Cucumbers, bell peppers, cherry tomatoes, etc.)
  • 1 cup Kalamata olives (For a briny contrast.)
  • 1 cup Greek salad (Optional but recommended.)

Instructions

Marinate the Chicken

  1. In a bowl, mix the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  2. Taste the marinade and adjust seasoning as needed before adding the chicken.
  3. Add chicken to the marinade and refrigerate for at least 30 minutes, ideally 2 to 6 hours.

Prepare the Chicken

  1. Cut the marinated chicken into even chunks (1 to 1.5 inches).
  2. Soak wooden skewers in water for 20-30 minutes if using.
  3. Thread chicken pieces onto skewers, leaving space between each piece.

Grill the Chicken

  1. Preheat the grill to medium-high heat.
