  • 2 medium Sweet potatoes, peeled or unpeeled, cut into chunks (Ensure even chunks for roasting.)
  • 2 medium Apples, cored and chopped (Leave the peel on for texture.)
  • 1 medium Red onion, cut into thick wedges
  • 3 tbsp Olive oil (Adjust oil based on pan dryness.)
  • 1 tsp Salt (Adjust based on sausage saltiness.)
  • 1 tsp Black pepper
  • 1 tsp Garlic powder (Or fresh minced garlic, added later.)
  • 1 tsp Paprika (Sweet or smoked.)
  • 1 pinch Cinnamon (Optional but recommended.)
  • 1/2 cup Dried cranberries (Or fresh if available.)
  • 1 tbsp Fresh thyme (Or dried thyme in a pinch.)

Instructions

Preparation

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the sweet potatoes, apples, onion, and sausage as described.

Roasting Sweet Potatoes

  1. Toss sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  2. Spread sweet potatoes out on a large sheet pan and roast for 15-20 minutes, flipping halfway.

Add Remaining Ingredients

  1. Once sweet potatoes are starting to soften, add the onion, apple, and sausage to the sheet pan.
  2. Drizzle with a bit more oil if necessary, toss gently, and roast for another 15 minutes.

Finishing Touches

  1. In the last 5 minutes, add cranberries to the pan to plump them up.
  2. Sprinkle fresh thyme over the dish before serving.

Notes

Store leftovers in an airtight container for 3-4 days. Reheat in the oven or air fryer for best results.
