- 6 cups chicken broth (low sodium)
- 1 piece bay leaf (optional)

For the Dumplings
- 3/4 cup pumpkin puree (not pumpkin pie filling)
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon nutmeg or smoked paprika (optional)
- 1/3 to 1/2 cup milk, as needed for dumpling dough
Instructions
Prepare the Soup Base
- In a large pot or Dutch oven, heat butter or olive oil over medium heat.
- Add diced onion, carrots, and celery. Cook for 6-8 minutes until onion is soft.
- Stir in minced garlic and cook for 30 seconds.
- Add the chicken, season with salt, pepper, and thyme, then pour in the chicken broth.
- Add the bay leaf if using, and bring to a gentle boil.
Cook the Chicken
- Lower the heat to a simmer and cook thighs for 18-22 minutes (breasts for 14-18 minutes).
- Remove the chicken, shred it with two forks, and return it to the pot.
- Adjust seasoning in the broth before adding dumplings.
- If desired, stir in cream or half and half and keep heat low.
Make the Dumpling Dough
- In a medium bowl, whisk together flour, baking powder, salt, pepper, and optional spices.
- Fold in pumpkin puree and drizzle in milk until the dough is thick and fluffy, but not stiff.
- Avoid overmixing to ensure light dumplings.
Cook the Dumplings
- Use a spoon or cookie scoop to drop dollops of dough onto the simmering soup.
- Cover the pot with a lid and simmer for 12-15 minutes without lifting the lid.
- Check for doneness with a toothpick; it should come out clean.
- Let sit off the heat for 5 minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently, adding broth or water as needed. For best results, make the dumpling dough fresh just before adding to the soup.
