Main ingredients
- 1 pound Chicken (breasts or thighs) (Boneless, skinless preferred.)
- 8 ounces Mushrooms (cremini or white) (Sliced.)
- 1 medium Onion (Optional, for added flavor.)
- 3 cloves Garlic (Minced.)
- 1 cup Marsala wine (Dry is preferred.)
- 1 cup Chicken broth
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Italian seasoning (Or a mix of oregano and thyme.)
- 2 tablespoons Butter (For richer sauce.)
- 1 cup Heavy cream (For creamy finish.)
- 1 tablespoon Cornstarch (For thickening if needed.)
Instructions
Preparation
- Slice mushrooms and onion, mince garlic. Add mushrooms, onion, and garlic to the slow cooker.
- Season the chicken with salt, pepper, and Italian seasoning on both sides.
- Optional: Sear the chicken in a hot skillet for a couple of minutes per side.
- Pour Marsala wine and chicken broth into the slow cooker. Add a small knob of butter.
Cooking
- Add chicken on top, cover, and cook on low for 3.5 to 5 hours, or high for 2 to 3 hours.
Finishing
- At the end of cooking, stir in heavy cream.
- Thicken the sauce if needed with a cornstarch slurry.
Notes
This recipe is perfect to make ahead and is even better as leftovers. Store in the fridge for up to 3-4 days. If freezing, add cream after thawing.
