  • 2 cups cooked chicken, shredded or diced (Rotisserie chicken can be used for convenience.)
  • 1 package gnocchi (Shelf stable or refrigerated.)
  • 1 cup onion, diced (Part of mirepoix.)
  • 1 cup carrot, diced (Part of mirepoix.)
  • 1 cup celery, diced (Part of mirepoix.)
  • 3 cloves garlic, minced (Do not skip the garlic.)
  • 4 cups low sodium chicken broth (Easiest to control sodium levels.)
  • 1 cup cream or half and half (For a smooth finish.)
  • 1 teaspoon thyme, dried (Add early in cooking.)
  • 1 tablespoon parsley, fresh, chopped (Add at the end for freshness.)
  • 1 cup spinach or kale (Add at the end to avoid wilted greens.)
  • 2 tablespoons butter (For sautéing vegetables.)
  • 2 tablespoons flour (Optional thickening agent.)

Instructions

Preparation

  1. In a large pot, melt butter and sauté onion, carrot, and celery with a pinch of salt until they are softened.
  2. Add garlic and stir for about 30 seconds.
  3. Optional: Stir in flour and cook for 1 minute to thicken.
  4. Slowly pour in chicken broth, stirring continuously until smooth.
  5. Bring the mixture to a gentle simmer and add the cooked chicken.
  6. Stir in cream, thyme, and parsley stems if using, along with black pepper.
  7. Add the gnocchi and simmer until they float and feel tender.
  8. Add spinach at the end, taste, and adjust salt and herbs as necessary.

Notes

Store leftovers in an airtight container for up to 3 days. To reheat, add a splash of broth or milk to loosen. For freezing, remove gnocchi and cream before freezing, and add them back while reheating for best texture.
