Description

A quick, creamy, and satisfying pasta salad featuring rotisserie chicken, romaine lettuce, and Caesar dressing, perfect for easy meals and gatherings.


Ingredients

Pasta and Chicken

  • 8 oz Rotini or penne pasta (Cook until just tender, then rinse with cold water.)
  • 1 whole Rotisserie chicken (Shredded or chopped.)

Salad Base

  • 4 cups Romaine lettuce (Crisp and cold is best.)
  • 1/2 cup Caesar dressing (Store bought or homemade.)
  • 1/4 cup Mayonnaise (For extra creaminess.)
  • 1/2 cup Parmesan cheese (Grated or shaved.)
  • 1 cup Croutons (Add right before serving.)
  • 1 tbsp Fresh lemon juice (Brightens the salad.)
  • to taste Black pepper (Caesar flavors require pepper.)

Optional Add-ins

  • 1/2 cup Cherry tomatoes (For sweetness and color.)
  • 1/4 cup Thin sliced red onion (For a bit of bite.)
  • 1/2 cup Chopped cucumber (For extra crunch.)
  • 1/4 cup Extra parmesan (Because yes.)


Instructions

Preparation

  1. Cook the pasta in salted water until just tender, drain, and rinse with cold water.
  2. Shred or chop the rotisserie chicken into bite-sized pieces.

Dressing Preparation

  1. In a small bowl, mix together the Caesar dressing, mayonnaise, lemon juice, and lots of black pepper.

Combine Salad

  1. In a large bowl, combine the pasta and chicken.
  2. Pour the dressing over and toss until everything is well coated.
  3. Add the romaine and parmesan and toss gently to keep the lettuce crisp.
  4. Chill the salad for 30 minutes if possible.
  5. Right before serving, add the croutons and extra parmesan.

Notes

Keep romaine separate if making in advance. Refresh leftovers by adding more dressing and lemon juice.
