A quick, creamy, and satisfying pasta salad featuring rotisserie chicken, romaine lettuce, and Caesar dressing, perfect for easy meals and gatherings.
Ingredients
Pasta and Chicken
- 8 oz Rotini or penne pasta (Cook until just tender, then rinse with cold water.)
- 1 whole Rotisserie chicken (Shredded or chopped.)
Salad Base
- 4 cups Romaine lettuce (Crisp and cold is best.)
- 1/2 cup Caesar dressing (Store bought or homemade.)
- 1/4 cup Mayonnaise (For extra creaminess.)
- 1/2 cup Parmesan cheese (Grated or shaved.)
- 1 cup Croutons (Add right before serving.)
- 1 tbsp Fresh lemon juice (Brightens the salad.)
- to taste Black pepper (Caesar flavors require pepper.)
Optional Add-ins
- 1/2 cup Cherry tomatoes (For sweetness and color.)
- 1/4 cup Thin sliced red onion (For a bit of bite.)
- 1/2 cup Chopped cucumber (For extra crunch.)
- 1/4 cup Extra parmesan (Because yes.)
Instructions
Preparation
- Cook the pasta in salted water until just tender, drain, and rinse with cold water.
- Shred or chop the rotisserie chicken into bite-sized pieces.
Dressing Preparation
- In a small bowl, mix together the Caesar dressing, mayonnaise, lemon juice, and lots of black pepper.
Combine Salad
- In a large bowl, combine the pasta and chicken.
- Pour the dressing over and toss until everything is well coated.
- Add the romaine and parmesan and toss gently to keep the lettuce crisp.
- Chill the salad for 30 minutes if possible.
- Right before serving, add the croutons and extra parmesan.
Notes
Keep romaine separate if making in advance. Refresh leftovers by adding more dressing and lemon juice.
