Ingredients

Units Scale

Main Ingredients

  • 1 whole whole chicken, about 3.5 to 4.5 pounds (Choose a plump chicken with intact skin.)
  • 2 to 3 tablespoons cracked peppercorns (Adjust for preferred heat level.)
  • 1.5 to 2 teaspoons kosher salt
  • 1 tablespoon oil (avocado or olive oil)
  • 2 tablespoons butter
  • 1 large shallot, finely chopped (Can substitute with a small onion, finely chopped.)
  • 1 teaspoon chopped rosemary (or thyme) (Use if preferred.)
  • 1 cup chicken broth
  • 3/4 cup heavy cream (Can substitute with half and half for a lighter version.)
  • 1 teaspoon Dijon mustard (Optional, but adds great flavor.)

Instructions

Preparation

  1. Preheat the oven to 450°F (232°C).
  2. Spatchcock the chicken by removing the backbone and flattening it. Pat the chicken dry with paper towels.
  3. Season the skin and cavity of the chicken with kosher salt and cracked peppercorns. Rub a thin layer of oil over the chicken.

Roasting

  1. Place the seasoned chicken skin side up in a cast iron skillet or roasting pan and roast for 20 to 25 minutes.
  2. Reduce oven temperature to 375°F (190°C) and continue roasting until the thickest part of the breast reaches 160°F (71°C) and thighs reach 175°F (79°C), about 25 to 35 minutes more.

Making the Sauce

  1. Transfer the chicken to a cutting board to rest and pour off most of the fat from the pan, leaving the browned bits.
  2. Add butter to the pan over medium heat. Once melted, add shallots and cook for 2 to 3 minutes until softened.
  3. Add chopped rosemary and cook for an additional 30 seconds.
  4. Pour in chicken broth, scraping up the browned bits, and let simmer for a few minutes. Then add heavy cream and Dijon mustard.
  5. Stir until the sauce lightly coats a spoon. If desired, add crushed peppercorns for more pepper flavor.

Finishing Touches

  1. Check that the chicken’s internal temperature meets safety standards, then let it rest for 10 to 15 minutes before slicing.
  2. Serve with creamy peppercorn sauce drizzled over cut pieces of chicken.

Notes

For best results, dry the chicken skin before seasoning and avoid covering during resting to keep the skin crisp. Store leftovers separately for better freshness.
