Description

A creamy, beefy, and cheesy dish that captures the essence of a cheeseburger while being low in carbs. Perfect for satisfying comfort food cravings without the pasta.


Ingredients

Main Ingredients

  • 1 pound Ground beef (80/20) (Drained after cooking)
  • 4 cups Cauliflower florets (Fresh or frozen)
  • 1 small Onion, diced (Diced small)
  • 2 cloves Garlic, minced
  • 8 ounces Cream cheese (Softened for easier melting)
  • 1 cup Heavy cream (Or half and half)
  • 2 cups Shredded cheddar cheese (Shred your own for best results)
  • to taste Salt (Adjust to taste after adding cheese)
  • to taste Black pepper (Adjust to taste)
  • 1 teaspoon Paprika (Optional for added flavor)
  • 1 tablespoon Mustard (Adds cheeseburger flavor)
  • to taste Sugar-free ketchup or tomato paste (Optional for sweetness)


Instructions

Preparation

  1. Brown the ground beef in a big skillet, breaking it into small pieces. Drain off excess grease, leaving a little for flavor.
  2. Add diced onion and cook for a few minutes until softened. Add minced garlic and cook for about 30 seconds.
  3. Introduce cauliflower florets. If fresh, add a splash of water and cover for a few minutes to steam slightly. If frozen, keep uncovered and let moisture cook off.

Making the Sauce

  1. Turn the heat to low and stir in the softened cream cheese until melted.
  2. Add heavy cream and stir until smooth.
  3. Add shredded cheddar cheese and stir until creamy. Season with salt, pepper, paprika, and mustard.
  4. Let it simmer for a couple of minutes until everything thickens. Taste and adjust seasoning as necessary.

Notes

This dish is ideal for meal prep. Store leftovers in an airtight container for up to 4 days. You can also freeze it, but the texture may change slightly. Reheat gently with a splash of cream or water.
