- 1 pound Ground beef (80/20) (Drained after cooking)
- 4 cups Cauliflower florets (Fresh or frozen)
- 1 small Onion, diced (Diced small)
- 2 cloves Garlic, minced
- 8 ounces Cream cheese (Softened for easier melting)
- 1 cup Heavy cream (Or half and half)
- 2 cups Shredded cheddar cheese (Shred your own for best results)
- to taste Salt (Adjust to taste after adding cheese)
- to taste Black pepper (Adjust to taste)
- 1 teaspoon Paprika (Optional for added flavor)
- 1 tablespoon Mustard (Adds cheeseburger flavor)
- to taste Sugar-free ketchup or tomato paste (Optional for sweetness)
Instructions
Preparation
- Brown the ground beef in a big skillet, breaking it into small pieces. Drain off excess grease, leaving a little for flavor.
- Add diced onion and cook for a few minutes until softened. Add minced garlic and cook for about 30 seconds.
- Introduce cauliflower florets. If fresh, add a splash of water and cover for a few minutes to steam slightly. If frozen, keep uncovered and let moisture cook off.
Making the Sauce
- Turn the heat to low and stir in the softened cream cheese until melted.
- Add heavy cream and stir until smooth.
- Add shredded cheddar cheese and stir until creamy. Season with salt, pepper, paprika, and mustard.
- Let it simmer for a couple of minutes until everything thickens. Taste and adjust seasoning as necessary.
Notes
This dish is ideal for meal prep. Store leftovers in an airtight container for up to 4 days. You can also freeze it, but the texture may change slightly. Reheat gently with a splash of cream or water.
