Ingredients

Dry Ingredients

  • 2 cups All-purpose flour
  • 1/3 cup Brown sugar (adds cozy depth)
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Baking soda
  • 1/4 teaspoon Salt (do not skip)
  • 2 teaspoons Chai spice mix (cinnamon, ginger, cardamom, cloves, allspice, black pepper)

Wet Ingredients

  • 1/2 cup Cold milk or buttermilk (a splash of vanilla optional)
  • 1 large Egg (optional for richness)
  • 1/2 cup Cold butter (cubed and chilled)

For the Maple Chai Glaze

  • 1 cup Powdered sugar
  • 2 tablespoons Real maple syrup
  • 1 tablespoon Milk or cream
  • 1 pinch Chai spice (to taste)
  • 1 drop Vanilla extract

Instructions

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the dry ingredients: flour, sugar, baking powder, baking soda, salt, and chai spice.
  3. Cut in the cold butter until the mixture resembles coarse crumbs with some pea-sized bits.
  4. Stir in the cold milk or buttermilk and vanilla until the dough comes together.
  5. Do not overmix; if too dry, add a splash more liquid.

Shaping and Baking

  1. Turn the dough onto a lightly floured surface and bring it together gently with your hands.
  2. Pat the dough into a circle about 1 inch thick for full-size scones, and cut into 8 wedges.
  3. For mini scones, pat into a smaller circle and cut into 12 to 16 wedges.
  4. Place scones on a baking sheet, making sure to leave space between them.
  5. Bake for 20-25 minutes until golden brown on top and the bottoms are set.

Glazing

  1. Let the scones cool for at least 10 minutes before glazing.
  2. In a bowl, whisk powdered sugar with maple syrup, a splash of milk or cream, chai spice, and vanilla to form the glaze.
  3. Drizzle over the cooled scones and let sit for a few minutes to set.

Notes

Store scones in an airtight container at room temperature for about 2 days. For longer storage, keep in the fridge. Reheat in the oven before serving.
