- 2 to 3 cups cooked cauliflower florets, well drained and cooled
- 1 cup shredded cheese (cheddar is classic)
- 1 large egg
- 1/2 cup breadcrumbs (plus a bit more if needed)
- 2 tablespoons chopped green onion or onion, optional
- 1 small garlic clove, grated or minced (or 1/2 teaspoon garlic powder)
- Salt and black pepper to taste
- Optional: pinch of paprika or chili flakes
- Oil for pan frying (or cooking spray for baking)
Instructions
- In a bowl, mix the mashed cauliflower, shredded cheese, egg, breadcrumbs, onion, garlic, salt, and pepper.
- Let the mixture sit for 3 to 5 minutes to absorb moisture.
- Scoop and form the mixture into patties, about the size of your palm.
- Heat a skillet over medium heat with a thin layer of oil. Cook 3 to 4 minutes per side, until deep golden and crisp.
- Cool on a plate for a couple of minutes before eating.
Notes
Keep cauliflower well-drained for crispy patties. Use enough binder and press firmly when shaping.
