Description

Cozy and crispy Cauliflower Cheese Patties that are easy to make and flexible with ingredients.


Ingredients

  • 2 to 3 cups cooked cauliflower florets, well drained and cooled
  • 1 cup shredded cheese (cheddar is classic)
  • 1 large egg
  • 1/2 cup breadcrumbs (plus a bit more if needed)
  • 2 tablespoons chopped green onion or onion, optional
  • 1 small garlic clove, grated or minced (or 1/2 teaspoon garlic powder)
  • Salt and black pepper to taste
  • Optional: pinch of paprika or chili flakes
  • Oil for pan frying (or cooking spray for baking)

Instructions

  1. In a bowl, mix the mashed cauliflower, shredded cheese, egg, breadcrumbs, onion, garlic, salt, and pepper.
  2. Let the mixture sit for 3 to 5 minutes to absorb moisture.
  3. Scoop and form the mixture into patties, about the size of your palm.
  4. Heat a skillet over medium heat with a thin layer of oil. Cook 3 to 4 minutes per side, until deep golden and crisp.
  5. Cool on a plate for a couple of minutes before eating.

Notes

Keep cauliflower well-drained for crispy patties. Use enough binder and press firmly when shaping.
