Description
A creamy, garlicky, and surprisingly rich vegan sauce made primarily from cauliflower, perfect for pasta or versatile in other dishes.

- 1 head Cauliflower, fresh or frozen florets (Fresh tastes great, but frozen is convenient.)
- 3-5 cloves Garlic (Adjust based on preference.)
- 1 small Onion or a little shallot (For sweetness.)
- 1 cup Unsweetened plant milk (oat, soy, or almond) (Use unsweetened milk.)
- 1/4 cup Nutritional yeast (For a savory cheesy flavor.)
- 2 tablespoons Lemon juice (To brighten everything up.)
- 1 teaspoon Salt (Adjust to taste.)
- 1/2 teaspoon Black pepper
- 2 tablespoons Olive oil or vegan butter (For a richer finish.)
- 1 pinch Nutmeg (Optional, for a classic Alfredo feel.)
Instructions
Preparation
- Cook the cauliflower until very soft by steaming, boiling, or roasting it.
- While the cauliflower cooks, sauté the onion and garlic in some olive oil with a pinch of salt until soft.
Blending
- Add the cooked cauliflower, sautéed onion and garlic, plant milk, nutritional yeast, lemon juice, salt, and pepper to a blender.
- Blend until completely smooth, running the blender longer than you think necessary.
Serving
- Pour the sauce into a pan and warm it gently, adding more plant milk if it gets too thick.
Notes
This sauce can be adjusted to be nut-free, higher in protein, or flavored differently. It can also be used beyond pasta as a pizza sauce, dip, or drizzle.
