Main Ingredients
- 1 lb Boneless skinless chicken breasts or thighs (Thighs stay extra tender.)
- 2 tbsp Cajun seasoning (Add more to taste later.)
- 2 cloves Garlic, minced (Fresh garlic enhances flavor.)
- 2 cups Chicken broth (For cooking chicken.)
- 1 cup Heavy cream (Or use half and half for a lighter version.)
- 1 cup Parmesan cheese, freshly grated (Freshly grated melts better.)
- 8 oz Pasta (penne, rotini, or fettuccine) (Short shapes grab the sauce well.)
- 2 tbsp Butter or olive oil (For adding richness.)
- to taste Salt and black pepper (Adjust seasoning as needed.)
Optional Add-Ins
- 1 cup Bell peppers, sliced (Optional for added flavor.)
- 1 cup Onions, sliced (Saute for a sweeter taste.)
- 1 cup Spinach (Stirred in at the end.)
Instructions
Preparation
- Add chicken to the slow cooker and sprinkle it with Cajun seasoning and black pepper.
- Add minced garlic and chicken broth to the slow cooker.
Cooking
- Cover the slow cooker and cook on low until the chicken is tender and easy to shred or slice (about 4 hours).
- In a separate pot, cook pasta until just al dente. Drain and set aside.
Finishing
- Turn the slow cooker to low and stir in butter, heavy cream, and Parmesan until smooth.
- Add pasta to the slow cooker and gently toss, letting it heat through for a few minutes.
Notes
Avoid cooking pasta in the crockpot to prevent mushiness. Cook it separately, adding it to the sauce later for the best texture. Adjust heat levels with more or less Cajun seasoning as desired.
