Instructions

Preparation

  1. Preheat the oven to 425°F (220°C).
  2. Slice the cabbage into thin ribbons to resemble noodles.

Roasting the Cabbage

  1. Spread the cabbage ribbons on a baking sheet. Drizzle with olive oil and roast until browned, about 20 minutes, flipping halfway.

Building the Flavor Base

  1. In a skillet, cook bacon until crisp. Remove and set aside, leaving some fat in the pan.
  2. Sauté chopped onion in the bacon fat until softened. Add garlic for the last 30 seconds.

Making the Sauce

  1. In a bowl, whisk egg yolks, grated parmesan, cream, and black pepper.
  2. Add a spoonful of the warm bacon fat mixture to the eggs while whisking to gently warm them.

Combining Ingredients

  1. Once the cabbage is roasted, combine it with the onion and garlic in the skillet.
  2. Turn off the heat and quickly stir in the egg and cheese mixture until everything is coated and the sauce is creamy. Add crisped bacon back in.
  3. Adjust seasoning with more pepper or salt if needed.

Notes
