Instructions

Roasting the Squash

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper.
  3. Spread out on a sheet pan ensuring it is not crowded.
  4. Roast for about 25 to 35 minutes, flipping halfway, until tender and browned.

Cooking the Orzo

  1. In a large pot, heat olive oil over medium heat and add the chopped onion. Cook until soft.
