A creamy and cheesy lasagna infused with spicy buffalo chicken flavor and cool ranch, perfect for a comforting meal.
Ingredients
Lasagna Components
- 9 pieces Lasagna noodles (Regular or oven-ready)
- 3 cups Cooked shredded chicken (Rotisserie chicken is perfect)
- 1 cup Buffalo sauce (Use your favorite brand)
- 1 cup Ranch dressing (Or ranch seasoning plus sour cream)
- 8 oz Cream cheese (Softened for easy mixing)
- 15 oz Ricotta cheese (Cottage cheese can be used)
- 2 cups Mozzarella cheese, shredded (For layering)
- 1 cup Cheddar cheese, shredded (Sharp is best)
- 1/4 cup Parmesan cheese (For topping)
- 1 Green onions, chopped (Optional but adds flavor)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 cup Blue cheese crumbles (Optional, for blue cheese lovers)
Instructions
Preparation
- Cook the noodles if using regular lasagna noodles. If using oven-ready noodles, check the box for liquid requirements.
- In a large bowl, mix softened cream cheese, ricotta, ranch dressing, buffalo sauce, garlic powder, onion powder, salt, and pepper.
- Fold in the shredded chicken and a handful of mozzarella.
- Preheat the oven to 375°F and prepare a 9×13 baking dish.
Assembly
- Spread a thin layer of the buffalo ranch mixture on the bottom of the dish.
- Add a layer of lasagna noodles.
- Add more buffalo chicken filling, followed by mozzarella and cheddar.
- Repeat the layers until ingredients are used up, finishing with cheese on top and a sprinkle of parmesan.
Baking
- Cover the dish with foil and bake for about 25 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes until bubbly and browned on top.
- Let it rest for 10 to 15 minutes before slicing.
Notes
For extra texture, consider adding diced celery, chopped spinach, or roasted red peppers. Meal prep can be simplified by making the buffalo ranch chicken filling up to 2 days ahead before layering and baking it.
