Description

A quick and easy flatbread recipe that brings the spicy, cheesy taste of buffalo chicken without all the hassle of traditional pizza.

Ingredients

Flatbread Base

  • 4 pieces Flatbreads (naan, pita, or any store bought flatbread) (Thicker flatbread holds more toppings; naan crisps well.)
  • 1 cup Cooked chicken (shredded or chopped) (Rotisserie chicken works best.)

Buffalo Chicken Toppings

  • 1/3 cup Buffalo sauce (Use your favorite brand.)
  • 1 cup Cheese (mozzarella and cheddar mix recommended) (Pepper jack can add extra heat.)
  • 2 tablespoons Ranch or blue cheese dressing (For drizzling on top.)
  • 1 small Red onion (thinly sliced) (Optional but adds great flavor.)
  • 2 tablespoons Green onions or chopped cilantro (For topping.)
  • 1 tablespoon Butter or olive oil (For brushing on the flatbread.)

Instructions

Preparation

  1. Preheat oven to 425 F and place a sheet pan inside while it heats.
  2. In a bowl, toss the cooked chicken with buffalo sauce until well coated.
  3. Lightly brush the flatbreads with olive oil or melted butter.

Assembly & Baking

  1. Add a thin layer of buffalo sauce or ranch on each flatbread.
  2. Layer cheese, buffalo chicken, more cheese, and red onion slices on top.
  3. Bake for 8 to 10 minutes until cheese is bubbly and edges are toasted.
  4. If desired, broil for 30-60 seconds for extra browning, keeping a close eye.

Finishing Touches

  1. Drizzle ranch or blue cheese dressing on top and sprinkle with green onions.
  2. Slice and serve immediately while the crust is still crisp.

Notes

For extra spice, add sliced jalapenos. For a fun twist, mix BBQ with buffalo sauce.
