Description

A bright and crunchy salad that features shaved Brussels sprouts, dried cranberries, nuts, and a honey mustard vinaigrette. Perfect for any occasion.


Ingredients

Salad Base

  • 1 pound Brussels sprouts, trimmed and thinly shaved
  • 1 cup Dried cranberries (For sweet tart pops)
  • 1/2 cup Chopped walnuts, pecans, or sliced almonds (Crunchy add-in)
  • 1/2 cup Shaved Parmesan or crumbled feta (For a salty component)
  • 2 stalks Green onions, thinly sliced

Honey Mustard Vinaigrette

  • 2 tablespoons Honey (For sweetness)
  • 1 tablespoon Dijon mustard (For bite)
  • 2 tablespoons Apple cider vinegar or lemon juice (For tang)
  • 1/4 cup Olive oil (To smooth it all out)
  • to taste Salt and pepper (For seasoning)


Instructions

Preparation

  1. Trim the ends off the Brussels sprouts and remove any sad outer leaves.
  2. Shave the Brussels sprouts thinly using a knife or mandoline.
  3. Put the shaved sprouts in a large bowl and add dried cranberries, nuts, and cheese.
  4. In a small bowl, whisk up the honey mustard vinaigrette.
  5. Dress the salad lightly first, toss, then add more dressing if needed. Let it sit for 5 to 10 minutes to soften slightly.
  6. Taste and adjust with salt, pepper, or another drizzle of dressing.

Notes

Serve the salad slightly chilled for the best flavor, and consider adding crisp apple slices for extra freshness. This salad can be made in advance; just keep the dressing separate until serving.
