Description

This cozy and filling chicken dish features juicy chicken breasts stuffed with a creamy cheddar and broccoli filling, making it perfect for busy weeknights.

Ingredients

Units Scale

For the Chicken

  • 4 pieces Chicken breasts, boneless and skinless (Choose medium to large breasts for easier stuffing.)
  • 1 tablespoon Olive oil (For searing chicken.)
  • 1 teaspoon Salt (For seasoning.)
  • 1 teaspoon Pepper (For seasoning.)
  • 1 teaspoon Paprika (Optional, for color.)

For the Broccoli Cheese Filling

  • 1 cup Broccoli, finely chopped (Fresh or thawed frozen, squeeze dry if frozen.)
  • 1 cup Sharp cheddar cheese, shredded (For best flavor.)
  • 4 ounces Cream cheese, softened (For a creamy texture.)
  • 1 teaspoon Garlic powder (Can substitute with minced garlic.)

Instructions

Preparation

  1. Preheat oven to 375°F (190°C).
  2. Prepare the broccoli by finely chopping and squeezing out excess moisture if using frozen.
  3. In a bowl, combine softened cream cheese, shredded cheddar, chopped broccoli, garlic powder, salt, and pepper. Mix until well combined.
  4. Cut a pocket into each chicken breast without slicing all the way through.
  5. Fill each chicken pocket with 2 to 3 tablespoons of the broccoli cheese filling and secure with toothpicks if necessary.

Cooking

  1. Heat olive oil in a skillet over medium heat.
  2. Sear each stuffed chicken breast for 2 to 3 minutes per side until golden brown.
  3. Transfer seared chicken to a baking dish and bake in preheated oven for 18 to 25 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Let the chicken rest for 5 minutes before slicing.

Notes

For variations, consider adding bacon bits or different types of cheese to the filling. Serve with simple sides like roasted potatoes, rice, or a salad.
