Description

A comforting side dish that’s quick to prepare, Cheesy Broccoli Rice combines creamy cheese with rice and broccoli for a delicious addition to any meal.


Ingredients

Main Ingredients

  • 3 cups cooked white rice or brown rice
  • 2 to 3 cups chopped broccoli, fresh or frozen
  • 2 tablespoons butter
  • 1 cup milk (any kind) (Warm the milk for better melting)
  • 1.5 cups shredded cheese (cheddar is classic) (Shred your own for better melting)
  • 0.5 teaspoon garlic powder (Add more if you love garlic)
  • to taste salt and pepper
  • 1 spoonful optional sour cream or cream cheese (For extra creaminess)


Instructions

Preparation

  1. Cook the broccoli first: steam fresh, or microwave/simmer frozen until hot.
  2. Melt butter in a pot over medium heat.
  3. Add milk, garlic powder, and a pinch of salt and pepper. Warm for 1-2 minutes without boiling.
  4. Stir in cheese a handful at a time until melted into a creamy sauce.
  5. Add cooked rice and broccoli, stirring until everything is coated and warm. Taste and adjust seasoning.

Notes

For extra creaminess, consider adding more dairy or a knob of butter at the end. Leftovers reheat well with a little splash of milk.
