  • 1 medium Onion, chopped (Base flavor)
  • 1 clove Garlic, minced (Adds rich flavor)
  • 1 cup Carrots, chopped (Optional for sweetness)
  • 1 tablespoon All-purpose flour (For thickening)

For the Soup Liquid

  • 3 cups Broth (chicken or vegetable) (Choose based on preference)
  • 1 cup Milk (or higher protein milk) (For creaminess)

Main Ingredients

  • 4 cups Broccoli, fresh or frozen (Fresh for firmer texture, frozen for convenience)
  • 1 cup Cottage cheese (Blended for creaminess)
  • 2 cups Sharp cheddar cheese, shredded (For cheesy flavor)

Seasonings

  • Salt To taste (Essential for flavor enhancement)
  • Pepper To taste (For added flavor)
  • Pinch Smoked paprika (optional) (For additional flavor)

Instructions

Preparation

  1. Sauté chopped onion (and carrots if using) in butter or olive oil until soft.
  2. Add garlic and stir for about 30 seconds.
  3. Sprinkle in flour, stir for a minute to remove raw taste.

Cooking

  1. Slowly whisk in broth and milk until smooth.
  2. Add broccoli, simmer until tender.
  3. Meanwhile, blend cottage cheese until smooth.
  4. Lower heat, stir in shredded cheddar until melted, then add blended cottage cheese. Adjust salt and pepper as needed.

Serving

  1. Serve warm, optionally topped with extra cheddar and black pepper.

Notes

This soup tastes even better the next day. Reheat gently and add a splash of milk if it thickens too much.
